In America the concept of specialty coffee became current in the early 1970s to indicate a coffee cultivated in specific climatic and environmental conditions, endowing it with a particular taste and aroma profile. The Specialty Coffee Association (SCA) defines a specialty coffee as a green coffee of high quality, roasted so as to bring out the best of justify aromatic potential. This potential is then extracted to reveal a distinctive identity according to a precise method guaranteed by the professionalism of the barista.

The distinction of “specialty” is assigned to coffees which attain a score of at least 80 points on the assessment form used in the SCA Cupping Protocol (Brazilian tasting method).

The world of specialty coffees brings out new tastes, such as single-plantation coffees and lighter roasted products, which are distinguished by greater acidity and aromatic complexity.
